Murgh Musallam With Rice Recipe By Chef Gulzar

Murgh Musallam is whole chicken marinated in spices and then cooked in the oven or in steam in a pan. It tastes good when served with rice.

Murgh Musallam With Rice

Ingredients Of murgh Musallam

  • 1 1/2 kg whole chicken
  • 2 tbsp gram flour
  • 1 onion, ground
  • 2 tbsp garlic paste
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tbsp green chilies, chopped
  • 1 tbsp red chili powder
  • 1 tbsp whole spices powder
  • 1 tbsp crushed black pepper
  • 2 pinch yellow food color
  • 4 tbsp vinegar
  • 4 tbsp tamarind pulp
  • Few drops screw pine(kewra)
  • 2 tbsp oil
  • Salt as required

Ingredients Of Rice

  • 1/2 kg rice
  • 4 eggs, boiled
  • 1/2 cup fried onions
  • 2 tbsp garlic paste
  • 1 tsp whole cumin seeds
  • 1 pinch yellow food color
  • 4 black cardamoms
  • 4 bay leaves
  • 2 sticks cinnamon
  • 5 cloves
  • 1/2 cup clarified butter
  • Salt to taste

Method To Make Chicken

  • Make small cuts on chicken. Make a paste of all the ingredients and rub this mixture on the chicken. Cook in a pre heated oven at 160 degrees for 40 minutes.

To Make Rice

  • Heat clarified butter in a pot, add cloves, cinnamon, black cardamom and bay leaves. Fry for a little while. Add garlic, rice, salt, and water. Leave to cook.
  • When rice is ready, add screw pine and food color. Leave on dum at low flame.
  • Place a layer of rice in a dish, arrange the chicken on top. Garnish with cut boiled eggs and fried onion before serving.

      1. Thanks, will let you know how it went, by the way my husband did two recipies from this blong and they turned out to be GREAT, I think it was zinger style burger by Chef zakir and I forgot what the other thing was but they were great. thanks

        1. You can skip kewra if you dont like the smell. If you dont have oven then you can also steam it and then fry it for few minutes till its golden brown from both side
