Potato Skins Recipe

I love to have a plate full of potato skins as a side dish. Topped with lots of cheese makes them irresistible and everyone raved about them. These skins are easy to make and they vanish in seconds from the table. There are two ways to cook your potatoes, one is in a gas oven and the other is in the microwave. Ingredients Of Potato Skins

  • 3 to 4 potatoes, baked
  • 3 tbsp olive oil
  • Salt to taste
  • 1/4 tsp black pepper
  • Cheese as required
  • oregano 1 tsp
  • 1 green onion sliced, only green part

Method Of Potato Skins

  • Preheat oven to 475°. Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use). Place potato skins on a greased baking sheet.
  • Combine oil with salt, black pepper, and oregano. brush over both sides of skins.
  • Bake until crisp, about 7 minutes on each side. Sprinkle some chicken and cheddar cheese inside skins. Bake until cheese is melted, about 2 minutes longer. Top with onions. Serve immediately.
