Ingredients
- 500 gm salmon or trout fillets
- Salt to taste
- Black pepper to taste
- 1 tbsp soya sauce
- 1 tsp garlic paste
- Olive oil as required
- 1 cup mayonnaise
- 1/4 cup plain yoghurt
- 1 tsp finely grated ginger
- 1 tsp finely grated lime rind
- 2 tsp lemon juice
- Salt to taste
- Black pepper to taste
Method
- Remove the skin and bones from salmon.Wash it and then wrap it in plastic wrap and freeze it for 1 hour.
- Soak small wooden satay sticks in cold water for 30 minutes. Preheat the grill.
- Cut the salmon fillets into 2 inch strips. Thread the stripes onto the satay sticks and marinate those sticks in salt, black pepper,garlic paste, olive oil and soya sauce.
- Grill for 2 minutes or until they are done and golden in color, taking care not to over cook.
Ginger Lime Mayonnaise
- Stir the mayonnaise and yoghurt until they are smooth, add ginger, lime rind,salt.black pepper and lemon juice.
- Chill for at least one hour.
- Serve this sauce with fish satay.
