You have to make few things before making this enchilada macaroni casserole. First of all, make tortillas and enchilada sauce. Then boil some macaronies and layer them and your melt in mouth creamy cheesy treat is ready.

  • Oil ¼ cup
  • Plain Flour 3 tbsp
  • Chili Powder 1 tsp
  • Red Pepper (crushed)1 tsp
  • Paprika 1 tbsp
  • Ketchup ¾ cup
  • Chicken Stock 1 cup
  • Cumin Seeds (roasted, crushed) ½ tsp
  • Ginger Garlic 1 tsp
  • Onion Powder ½ tsp
  • Salt 1 tsp
  • Garlic (chopped) 1 tbsp
  • Onion (cubes) 1
  • Tomato (cubes) 1
  • Mixed Herbs 1 tsp
  • Cheddar Cheese ½ cup
  • Mozzarella Cheese ½ cup
  • Boneless Chicken cubes 300 gms
  • Tortillas 8
  • Sour Cream 1 cup
  • Macaroni (boiled) 2 cup
  • Nachos 1 packet
  • Lemon juice 1 tbsp

    Ingredients For Tortillas

  • Flour 2 cups
  • Baking Powder ½ tsp
  • Oil 2 tbsp
  • Salt ½ tsp
  • Water to knead
    Method Of Enchilada Macaroni Casserole
  • Marinate chicken cubes with salt, black pepper, red chili powder, garlic paste and cumin all ½ tsp each, then grill in 2 tbsp oil, keep aside.
  •  Mix all ingredients of tortillas and knead it into a dough.Make tortillas keep aside.
  • Mix cream with lemon juice and keep it aside, boil macaroni and keep aside.
  • Make a sauce by heating ¼ cup oil, add in flour, paprika, chili powder, ketchup and stock cook till thick, remove from heat.
  • TO ASSEMBLE
  • Spread sauce on tortillas then sour cream and chicken and make a roll and put in the long dish.
  • Spread with pasta, tomatoes, onion, sour cream, sauce, both the cheese, put to bake in the oven for 15 mins till cheese melts.
  • Remove serve garnished with crushed nachos.
