Gluten-Free Breakfast Cookie Recipe

So this gluten-free breakfast cookie is going viral on Tictok. This recipe is tried by Erica Smith Nicholson. You can make this in a blender for 5 minutes. I love to have it any time. It is really heavy and you don’t need to eat anything with it. You can also bake this in the microwave.

Ingredients Of Gluten Free Breakfast Cookie

1/2 cup oats
1/2 banana (the spottier the better!)
1 egg
1/4 cup milk of choice (I used homemade cashew)
Pinch of salt
1/4 tsp baking soda
Chocolate chips
Optional – 1 tbsp sweetener of choice if you want it sweetener (honey, maple syrup, coconut sugar, brown sugar are all good options!)

Method Of Gluten Free Breakfast Cookie
1) add all ingredients (except choc chips) to a blender and blend until fully combined
2) pour batter into an oven-safe baking dish
3) top with chocolate chips
4) bake at 350F for 20-25 ish minutes
