Laksa Recipe (By Chef Amina)


Laksa is a spicy noodle soup which is very popular in Singapore and Malaysia. It is coconut based soup or curry. You can add spices according to your taste in it. Meat can also be changed according to your taste. You can also cook it with fish.


Ingredients Of Laksa

  • 1/2 kg boneless chicken pieces
  • 10 whole red chilies
  • 1 tsp. turmeric powder
  • Salt to taste
  • 1 tbsp. ginger paste
  • 1 tsp. red chili powder
  • 1/4 bunch green coriander leaves
  • 2 tbsp. lemongrass
  • 2 onions
  • 1 tsp. shrimp paste
  • 6 cashew nuts
  • 6 cloves garlic
  • Oil as required
  • 1 packet egg noodles
  • 1 cup bean sprouts
  • 1 cup chicken stock
  • 1 cup coconut milk
  • 1 tsp. sugar

Cooking Method Of Laska

  • In a blender, blend together whole red chilies, turmeric powder, salt, ginger, red chili powder, lemongrass, onions, shrimp paste, cashew nuts, garlic, and oil.
  • Cook noodles in boiling water. Heat oil in other pan and fry the blended mixture in it.
  • Now add chicken stock, coconut milk and chicken pieces in that mixture. Cook till chicken becomes tender.
  • Add coriander leaves, sugar, and salt. Cook for few minutes and then add boiled noodles in it.
  • Add bean sprouts at the end and cook for other few minutes. Dish out and serve.
