Salmon Satay with Ginger Lime Mayonnaise: Recipe

Ingredients

  • 500 gm salmon or trout fillets
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp soya sauce
  • 1 tsp garlic paste
  • Olive oil as required

Ginger Lime Mayonnaise

  • 1 cup mayonnaise
  • 1/4 cup plain yoghurt
  • 1 tsp finely grated ginger
  • 1 tsp finely grated lime rind
  • 2 tsp lemon juice
  • Salt to taste
  • Black pepper to taste

Method

  • Remove the skin and bones from salmon.Wash it and then wrap it in plastic wrap and freeze it for 1 hour.
  • Soak small wooden satay sticks in cold water for 30 minutes. Preheat the grill.
  • Cut the salmon fillets into 2 inch strips. Thread the stripes onto the satay sticks and marinate those sticks in salt, black pepper,garlic paste, olive oil and soya sauce.
  • Grill for 2 minutes or until they are done and golden in color, taking care not to over cook.

Ginger Lime Mayonnaise

  • Stir the mayonnaise and yoghurt until they are smooth, add ginger, lime rind,salt.black pepper and lemon juice.
  • Chill for at least one hour.
  • Serve this sauce with fish satay.
